If you've been craving proper chip shop style chips while staying on plan, this recipe is for you. Unlike my Perfect Crispy Oven Baked Fries, these have a softer, fluffier centre with that familiar golden finish you'd expect from your favourite takeaway, all without deep frying.

The secret is choosing the right potato. While floury potatoes are best for crispy oven chips, waxy potatoes give you that authentic chip shop texture. Here in Canada, Yukon Gold potatoes are my top choice thanks to their buttery flavour, while in the UK, Elfe potatoes work brilliantly too.

Ingredients Notes
To make this recipe you will need the following ingredients:
- Yellow-fleshed potatoes: For authentic chip shop style chips, I recommend using a semi-waxy variety of potato rather than a floury one. Here in Canada, Yukon Gold potatoes are perfect. In the UK, Elfe, Maris Peer, Charlotte, Jazzy or Vivaldi are all great choices. These varieties give you that soft, fluffy centre and lightly golden exterior that's typical of chip shop chips.
- Olive oil spray: A light spray is all you need to help the chips colour as they cook. Any low-calorie cooking spray, such as Frylight or Pam, will work too.
- Salt: Season the chips as soon as they come out of the oven while they're still hot so it sticks to the surface.
- Malt vinegar: The classic finishing touch for proper chip shop chips. Sprinkle over just before serving, or leave it off if you prefer.
Once you've gathered all the ingredients and prepared them accordingly, you're all set to create this easy and delightful recipe.
