Leftover Mashed Potato Waffles
Every time I make these mashed potatoes for dinner, I always always have heaps leftover, because we are more about the main dish than the side and I can never eat much-mashed potatoes.
I hate wasted food, so am always making patties or similar with the leftover mashed potato, but today I fancied waffles of the savoury variety, so dug out my waffle maker to make some delicious waffles to go with a bowl of soup.
Flavouring for Potato Waffles
When it comes to adding flavour to your potato waffles, don't be scared to experiment with different herbs and seasonings. Yes, you can stick to what I use, but really if you just fancy some good ole salt and pepper that is fine too.
I wanted to give these a kind of pizza flavouring, so opted for:
- Paprika
- Pinch of dried basil and oregano
- Garlic Powder
- Onion Powder
- Sea Salt and Black Pepper
If you want you could even add in some sauteed onion or peppers etc, just be sure to not go too heavy with them, as they may not hold together as well.
Best Waffle Maker for Potato Waffles
You may be wondering what is the best waffles maker for making waffles and that's a good question.
If you plan on making lots of different waffles like some of these below:
- Pumpkin Waffles
- Ham and Cheese Stuffed Hash Brown Waffles
- French Toast Waffles
- Chocolate Waffles
- Belgian Style Waffles
- Hash Brown Waffle Pizza
Then you definitely want to choose one that has a variable heat, I find potato waffles need a higher heat, but my sweet waffles a lower heat.
This Andrew James 4 Slice Waffle Maker has a variable heat, so is perfect.

You will also find lots of different types of waffles makers, some making little mini waffles and then there are some great ones with interchangable plates where you can do waffles, pancakes, toasted sandwiches and even grill food. So always go for what you think you will use the most.
A silicone waffle tray may work okay too, but I personally prefer the final result in a proper waffle iron.
When cooking the waffles, I like to just half fill each waffle compartment, so you get a more rustic shape.
How to serve Potato Waffles
If we are enjoying these potato waffles for breakfast, we love them just as they are with some eggs (usually poached or fried), and then the kids love baked beans with theirs, but grilled mushrooms or tomatoes are another great side. Hey, we sometimes even have crispy bacon or sausages.
You can also enjoy them as part of a main meal instead of my Perfect Oven Baked Chips, I even like this on the side of some chilli with sour cream and salsa and if I have a few spare, some mashed avocado - yum!!.
Another great way to serve these is topped with some cheese of your choosing once they are cooked and placed under the grill until melted. Then you can have them on the side of some soup instead of bread. I love them with this Roasted Vegetable Soup.
If you prefer you can add your cheese into the mashed potato mix to turn these into cheesy potato waffles.

Potato Waffles
Potato Waffles - delicious leftover mashed potato waffles flavoured with a blend of herbs and spices and great for breakfast with eggs or topped with cheese as a side to soup.
Ingredients
- 300g of Cold Leftover Mashed Potatoes Click for recipe
- 1 egg
- pinch of paprika
- ½ teaspoon oregano
- ½ teaspoon of basil
- ¼ teaspoon of garlic powder
- ¼ teaspoon of onion powder
- ¼ teaspoon of salt
- pinch black pepper.
- cooking oil spray
- chopped spring onion
Instructions
- Heat waffle iron to highest temp.
- Place leftover cold mashed potato between some kitchen paper and blot to absorb any excess liquid, you want the mashed potatoes really dry.
- In a bowl combine the mashed potatoes with the egg and seasonings.
- Once waffle iron is heated.
- Spray with the cooking oil spray
- Roughly spoon 4 heaps of the mixture into 4 compartments of the waffles maker (the mix won't fill the whole compartment, you are going for rustic potato waffles.
- Waffles are ready with lovely and golden.
- Sprinkle with chopped spring onions and they are ready to serve.
- Enjoy!!

Hi there, I tried making these today and it didn’t go too well.. they kept getting sticking to the waffle maker, so I had to put them in the oven as a last resort. Any ideas why this might be happening, I’m a total newbie in the kitchen so any tips would help:)

make sure you don't open the waffle iron while they cook, as it will pull them apart before they have set, also make sure you mashed potatoes are not too wet. You want them pretty dry when you add in the egg, if your mashed potato is too wet, you may want to add in another egg to ensure they hold together. But again high temp on waffle iron and don't open while they cook, must waffle irons have a light to indicate cooking time.
