Beef, Apple and Quinoa Balls

Slimming Eats Recipe

Makes approx 20 balls

Extra Easy – 4 syns for entire recipe

Ingredients

400g of extra lean beef mince (or you can use Chicken, Lamb or Pork mince)

400g of cooked Quinoa

1 large apple, grated (sweet varieties are best, I used a lady alice) (4 syns)

2 tablespoons of tomato paste

2 teaspoons of paprika

2 teaspoons of cumin

handful of chopped fresh coriander

salt and black pepper (as required)

1 egg, beaten

Frylight or Pam spray

* remember fruit when not in it’s raw form i.e. cooked, blended or pureed becomes syns – refer to your basic syn guide for syn values in you are unsure of syn value

Method

Preheat oven to 180c of 350f

Add to a large bowl the beef, apple, paprika, cumin, tomato paste,freshly chopped coriander and salt and pepper as required (I didn’t add any to this, as my kids loves these, so I leave out the salt in most of my food)

Work together thoroughly

Making sure the quinoa has completely cooled down. Add it to the meat mixture along with the beaten egg and again work together thoroughly.

Form into equal size balls and place on a baking tray, sprayed with Frylight or Pam spray. Spray over the top also.

Bake in the oven until golden all over and cooked through. (approx 30 mins)

These are great served with a salad and some sweet chilli sauce or topped with a homemade tomato sauce. The mixture can also be used for burgers or a meatloaf.

    These look lovely but what would you eat them with?

    they are great on their own with a salad and a bit of sweet chilli sauce or mayo, or make up a syn free tomato sauce and serve them topped with that and some pasta/rice. Would be good topped with a curry sauce also.

    they are great on their own served with a salad a bit of mayo or sweet chilli sauce, or can be topped with a homemade tomato type sauce with pasta/rice. They would even work topped with a homemade curry sauce.
