Breakfast Towers
These breakfast towers are a great protein breakfast to start your day -homemade sausage patties topped with tomato and a poached egg on a bed on baby green.
Ingredients
- 4 breakfast patties - click for recipe
- 4 large eggs
- mixed baby greens
- 2 tomatoes, thinly sliced
- black pepper and salt
Instructions
- Cook breakfast patties as per recipe in link above.
- Bring a saucepan of water to a rapid boil, then turn down heat and wait for the water to stop bubbling.
- CracK an egg into a shallow bowl and lower it gently into water.
- Repeat with the other egg, leave for approx 3 mins and then remove with a slotted spoon onto kitchen pan. I prefer to do this to remove any excess water
- Once eggs are cooked, place two small piles of mixed greens on a small plate, top with each pile with a breakfast pattie, then tomato slices and lastly the poached egg on top.
- Season with salt and black pepper.
