Soups packed with delicious filling ingredients are always some of my favourite meals. Even with a simple vegetable soup, I love adding toppings or extra ingredients to make it feel more satisfying, and proteins or grains are always great for that. This soup has everything cooked together in one big pot with tender chicken, rice, vegetables and loads of delicious flavour in every spoonful.

Too little and it'll taste flat; too much and it can become overly salty.
- Coconut Milk: Adds creaminess and balances the spices with a subtle sweetness.

Variations and Substitutes
This soup is really easy to adapt depending on what ingredients you have on hand and how spicy or creamy you like it.
- Swap the chicken for turkey, chickpeas, lentils or beans for a different protein option.
- Add extra vegetables like spinach, peas, sweet potato, butternut squash, carrots, bell peppers or zucchini to bulk the soup out even more.

Storing, Freezing and Reheating
Storing
Allow the soup to cool before transferring to an airtight container and storing in the fridge for up to 3 days. The rice will continue to absorb some of the liquid as it sits, so the soup may thicken slightly.
Freezing
This soup can be frozen for up to 3 months in freezer safe containers. Just keep in mind that the rice may soften a little once defrosted and reheated.For best results, you can also freeze the soup without the rice and add freshly cooked rice when reheating.
Reheating
Reheat gently in a saucepan over a medium low heat until piping hot, stirring occasionally. Add an extra splash of stock or water if needed to loosen the soup as the rice absorbs liquid during storage. You can also reheat individual portions in the microwave in short bursts, stirring halfway through until heated through.

Rice in soup isn't ideal for freezing, as it tends to absorb all the stock. If you do freeze it, you'll need to add more stock when reheating, and make sure to follow food safety guidelines for reheating rice.
