Ingredient Notes
To make this recipe you will need the following ingredients:
- Watermelon: Sweet, juicy watermelon is the star of this salad and adds lots of fresh summer flavour.
- Feta: Crumbled feta adds a salty, creamy contrast that works perfectly with the sweetness of the watermelon.
- Mixed baby greens: These add a fresh base and make the salad feel a little more substantial.
- Baby cucumbers: Crisp and refreshing, these add extra crunch and pair really well with the watermelon.
- Red onion: Thinly sliced red onion adds a little sharpness and balances the sweeter flavours in the salad.
- Fresh mint: Mint brings a lovely fresh flavour that really lifts the whole salad.
- Lemon juice : Adds brightness and a little zing to the dressing.
- Olive oil: Helps bring the dressing together and lightly coat all the ingredients.
- Honey: Adds a touch of sweetness to balance the lemon and saltiness of the feta.
- Salt and black pepper: Used to season the salad and dressing and bring all the flavours together.
Once you've gathered all the ingredients and prepared them accordingly, you're all set to create this easy and delightful recipe.
See the recipe card for specific quantities and instructions.
Variations and Substitutes
A few simple swaps can help you make this salad work with what you have on hand.
- Greens: Mixed baby greens work really well, but you can swap them for rocket, spinach or romaine for a different texture.
- Feta: Feta is the classic choice here and adds that perfect salty contrast to the sweet watermelon, but creamy goat's cheese also works well if you want a softer, tangier flavour. Light mozzarella can also be used for something more mild and delicate.
- Cucumber: Baby cucumbers are great for crunch, but regular cucumber works just as well, just chop it into bite sized pieces.
- Red onion: If you want a milder flavour, try finely sliced shallots or soak the red onion in cold water for a few minutes before adding to the salad.
- Mint: Fresh mint really lifts the salad, but fresh basil is a lovely alternative.
- Dressing: The lemon, honey and olive oil dressing keeps this salad light and fresh, but you can swap it for a light balsamic dressing made with balsamic vinegar, olive oil, a little honey, salt and black pepper.
- Add extra texture: For a little crunch, try adding some toasted pumpkin seeds, sunflower seeds or chopped walnuts just before serving.
- Make it more filling: To turn it into more of a main meal, serve with grilled chicken, prawns or your favourite protein.

What to Serve with Watermelon Feta Salad
This fresh and vibrant salad works really well as a side for all kinds of summer meals. It pairs especially nicely with grilled chicken, chicken skewers, salmon, prawns or steak, making it a great option for BBQs, garden lunches or easy warm weather dinners.
It also works well alongside burgers, wraps or sandwiches if you want something light and refreshing to balance out a heavier main. You could also serve it with grilled turkey burgers, pork chops, grilled shrimp skewers or simple roasted chicken for an easy warm weather meal. For a simple lunch, you can even serve it with some of your favourite bread (I love it with a mini ciabatta which are typically lower in calories)
How to Store Watermelon Feta Salad
If you want to enjoy this salad over a couple of days, it's best stored in separate parts rather than fully assembled. Keep the dressing in a separate airtight container in the fridge, and for the freshest texture, store the watermelon and feta separately from the baby greens, cucumber, red onion and mint.
When ready to serve, just combine everything in a bowl and drizzle over the dressing. This helps keep the greens crisp and stops the watermelon and feta from making the salad too watery as it sits. It's definitely best enjoyed fresh, but storing it this way makes it much easier to prep ahead.
