Bacon, Baby Bok Choy and Mushroom Harvest Grain Blend

On a recent trip to the US, we popped to Trader Joes, a great little grocery store, which does some lovely healthy/organic type products. While browsing for some quinoa and couscous. I came across a bag of Trader Joes Harvest Grain blend, which consists of Israeli Couscous, Baby Garbanzo Beans, Orzo, Red Quinoa

So I decided to give it a try today and was really impressed. All the different textures of the grains work really well together. Here is the recipe I threw together.

I know some of you won't be able to get this, but you may be able to buy the different grains separately and make your own mix.

Serves 2

Ingredients

¾ cup of Trader Joes Harvest Grain Blend

1 ½ cups of chicken stock

3 large button mushrooms, chopped

3 slices of lean Canadian bacon (all fat removed)

1 baby bok choy

1 small red onion, finely chopped

2 cloves of garlic, crushed

black pepper

Method

Add the stock to a saucepan and once boiling, add the Harvest Grain blend. Bring back to the boil, reduce hit and simmer until all stock has been absorbed.

Spray a frying pan with non stick spray, add the onions, garlic and bacon and cook for 3-4 mins, until onions have softened and bacon is golden and cooked through.

Add the mushrooms and bok choy and cook for a further 3 mins.

Add the harvest blend to a large bowl and mix in the bacon, onion, mushroom and bok choy.

Divide between two plates and season with a bit of black pepper.
