Strawberry Shortbread Frozen Yoghurt
Slimming Eats Recipe
Green – 4 syns per serving
Extra Easy – 4 syns per serving
Original – 4 syns per serving
3 cups of fat free vanilla yoghurt
1 tsp of vanilla essence (I use a good quality one)
8 tablespoons of splenda
80ml of skimmed milk (1 syn)
250g of strawberries (4 syns)*
2 shortbread fingers (11 syns)
*fruit when cooked or pureed becomes syns, also be sure to check the calories on your shortbread fingers, the ones I used were 110 calories each.
Place the strawberries in a blender and blend until smooth.
Place the blended strawberries, yoghurt, essence, spenda and milk in a bowl and whisk until all ingredients are combined.
Add to you ice cream maker and turn on.
Roughly chop the shortbread fingers and add to the ice cream maker just as the mixture starts to thicken.
This ice cream is of a soft consistency, if you prefer it firmer, then add to a tub and freeze until it is as you like it.
