Ham and Hashbrown Omelette
I didn’t have time to take a picture of my brekkie this morning. As I was in a bit of a rush to get out. But it was very yummy and filling.
The recipe below:
Serves 2-3
2.5 syns and 1 HEa (or syn the cheese, if you have no HE left) for entire recipe on Extra Easy or Red
Ingredients
6 eggs beaten
small dash of skimmed milk
2 spring onions finely chopped
1/2 red pepper finely chopped
1/4 teaspoon of garlic salt
1/4 teaspoon of black pepper
2 teaspoons of low fat spread
1 potato grated (and squeezed of excess liquid)
couple of slices of ham, chopped
42g of reduced fat cheddar cheese
Method
Add the egg, milk, onions, red pepper, garlic salt and black pepper to a bowl, mix thoroughly and set aside.
Melt the low fat spread in a frying pan and add the potatoes and ham. Cook for approx 8 minutes or until light brown.
Add the egg and vegetables, cook over a medium heat, do not touch until the mixture begins to set on the bottom and around the edges.
With a spatula, slide it underneath the egg and flip over. Continue cooking for approx 3 minutes.
Sprinkle cheese over the top and once it has melted it is ready to be served.
