Slimming Eats Recipe
Extra Easy – 1 HEa and 3 syns per serving
Green – 1 HEa and 3 syns per serving
Gluten free and sugar free
- 1 cup of cooked quinoa (I used tricoloured)
- half a red onion, finely chopped
- two vine tomatoes, finely chopped
- cucumber, chopped
- 84g of feta cheese (2xHEa's)
- 1 tablespoon of extra virgin olive oil (6 syns)
- juice of half a lemon
- fresh chopped mint
- salt and black pepper
- Place all ingredients into a large bowl and carefully toss.
- Serve in glasses or pots
