Chocolate Scan Bran Cake with Vanilla Cream and Fresh Raspberries

This is my adaption on a Slimming World recipe.

Chocolate Scan Bran Cake with Vanilla Cream & Raspberries

Slimming Eats Recipe

Serves 4

Green– 3 syns for 1/4 serving of cake

Original – 3 syns for 1/4 serving of cake

Extra Easy – 3 syns for 1/4 serving of cake

Ingredients

  • 5 Scan Bran (5 syns)
  • 3 beaten eggs
  • 1 level tbsp golden syrup (2 syns)
  • 1oz cocoa powder (4.5 syns)
  • 1/4 cup sweetener
  • low calorie spray

Topping: (I don’t add my topping to the whole cake, just do it per slice ¼ of the cake as you have it)

  • 2 tablespoons of Quark
  • 1 teaspoon of sweetener
  • ½ teaspoon of vanilla extract
  • Fresh Raspberries

Method:

Preheat oven to 180c or 350f

Soak the Scan Bran in boiling water to soften. Drain and mash.

Mix together with the 3 beaten eggs, syrup, cocoa powder and sweetener

Spray a round cake tin with some low calorie spray (if you havent got a good non stick tin, I recommend lining with baking paper)

Bake in the oven for 25-30 mins

To make the topping: mix up the quark with the sweetener and vanilla extract and spread on top of your slice, add the fresh raspberries to the top.

    yep you can use the scan bran as a HEb :)

    we had this as a taster at slimming world this week and it can be cooked in the microwave on full power for 7 mins to save time. I have opted to have some squirty light cream with cherries, the nearest thing to a black forrest, 10 syns in a full tin of the cream, yummy

    I read somewhere that the syns for scan bran changed a while back from 1/2 a syn to 1 syn each – is the syn value for this cake still correct taking that into account? I note the recipe was originaly posted in July 2009.

    yep they are 1 syn each now, thanks for pointing out. I have updated the recipe, and it doesnt actually make that much different to the syn value, only a extra 1/2 syn per quarter of a slice.
