Beef and Sweet Potato Meatloaf

Slimming Eats Recipe

Serves 4

Original – syn free per serving (substitute the sweet potato for squash)

Extra Easy – syn free per serving

 

Ingredients

500g of extra lean ground sirloin beef

1 small sweet potato, peeled and chopped into small chunks

1 onion, finely chopped

2 cloves of garlic, crushed

sprinkling of paprika

2 tablespoons of tomato paste

salt and black pepper to season

1 egg, beaten

Frylight or Pam spray

Fresh Italian Parsley, chopped

 

Method

Preheat oven to 180c or 350f

Spray a frying pan with some Frylight or Pam spray, add the sweet potato, onion and paprika and cook until softened and golden.

In a large mixing bowl, add the ground beef, sweet potato, onion, tomato paste, garlic, fresh Italian parsley, beaten egg and mix together thoroughly.

Season with some salt and black pepper

Line a loaf pan with some parchment paper.

Add the meat mixture to the loaf pan and push down well.

Bake in the oven for approx 1 hour. Meatloaf should be firm and nice and browned on the outside.

Slice and serve with your choice of side

    I made this today and it was nice but there was a few issues.  Mine didn’t come out in a loaf even though I used and did as exactly as instructed.  I also found it a bit garlicy, even though I love garlic, and not meaty enough.
    Next time I’m going to add a couple of oxos and half the garlic but I did think without the changes I would cook it in a pan and add some passata and add it to some pasta for a bit of a spin on Spag Bol.
