Baked Sprouted Bean Trio Stuffed Courgettes

I used some of my Maple Bacon Baked Beans for this recipe. The bean mix is from Costco and consists of the following: sprouted lentils, mung beans and adzuki beans and is from TruRoots
Ingredients
- approx ½ serving of my Maple Bacon Baked Beans (made as per this recipe here)
- 2 courgettes. sliced in half lengthways
- salt and black pepper
- Frylight or Pam spray
- 90g of mature cheddar
- fresh chopped coriander
Method
Preheat oven to 200c or 400f
Lined a baking tray with some aluminum foil.
Get each courgette half and carefully scrap out some of the soft seeded part, so you have some slight dips in each half to fill with you filling.
Place on the baking tray and spray with some Frylight or Pam spray and season with salt and black pepper.
Fill each half with some of the Maple Bacon Baked Beans and top with the cheddar.
Place in the oven and bake until cheese is complete melted and golden on top.

Hi Emma, I usually just serve these with a mixed salad. Occasionally some syn free chips too if really hungry.
