
If you haven't tried cauliflower mash then you really should, it tastes amazing, in fact you won't even realize it is cauliflower. For the sour cream, I use Greek yoghurt which I sour with some juice of a lemon, this keeps the dish fat free, but if you want some real sour cream, then of course go ahead. This also can make a great topping for shepherds or cottage pie, I suggest adding a couple of raw eggs to the mixture if you use it for this, it will firm it up slightly above the meat filling.

Quick question, in your Sour Cream and Spring Onion Cauliflower Mash - you reference Greek yogurt in the preamble, but in the recipe itself you mention quark - which is better to use. Let me know
