If you have ever been to Canada, the chances that you have tried Poutine are quite high, as it is served in pretty much any food place. Now it may look like chips, cheese and gravy, but Poutine takes it to a whole other level.

Traditionally it is crispy fresh fries cooked in their skins, topped with cheese curds and a tangy flavoursome gravy. I am not sure if cheese curds qualify for a healthy extra yet (I have enquired) so for now I used Mozzarella, which has a similar kind of texture. Cheese curds have these yummy kind of melty squeakiness to them with each bite, it’s just sooo good. I love Poutine!!

Slimming Eats Poutine
Enjoy the perfect combination of oven-baked fries, golden and crisp on the outside, tender on the inside, all smothered in rich gravy and melted cheese curds. This oven-baked poutine brings a comforting, indulgent twist to the classic Canadian dish, making it easy to enjoy at home.
Ingredients
- 700g (24.5oz) of russet potato, leave skin on (or similar floury potato), sliced into chips
- sea salt
- 120g (4.2oz) of mozzarella, roughly broken up into pieces or cheddar cheese curds (if you can get them)
For the Gravy
- 1 cup (240ml) of chicken stock
- 1 cup (240ml) of beef stock (use all vegetable if vegetarian)
- 2 tablespoons of cornstarch
- Splash of Worcestershire sauce
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- pinch of black pepper
- low calorie spray
Instructions
For the Gravy:
- Combine the gravy ingredients in a jug.
- Pour the mixture into a small saucepan and bring to a simmer over medium-high heat.
- Stir occasionally until the gravy thickens.
- Set the gravy aside until the fries are ready.
- When ready to serve, reheat the gravy on the hob and add a splash of stock if needed to loosen the consistency.
Oven Method for Fries/Chips:
- Slice potatoes to desired chip/fry shape, can peel or leave skin on.
- Add to a large bowl of water with ice and soak for approx 30 minutes.
- Drain and rinse under cold water, then pat dry between a clean towel or kitchen paper.
- Preheat oven to 180c fan, 220c/425f or gas mark 7
- Line a large baking sheet with parchment paper and spray with low calorie cooking spray
- Add the fries/chips well spaced out onto the baking sheet, add a pinch of salt sprinkled evenly over the top and then spray over the top with more cooking oil spray
- Place in the oven and bake for about 40-45 mins until golden and crispy, turning over around the 25 minutes mark. Spray with more low calorie spray if needed.
- Season with more sea salt to your desired taste.
Air Fryer Method for Fries/Chips:
- Slice potatoes to desired chip/fry shape, can peel or leave skin on.
- Add to a large bowl of water with ice and soak for approx 30 minutes.
- Drain and rinse under cold water, then pat dry between a clean towel or kitchen paper.
- Spray generously with low calorie spray and season well with salt
- Add to air fryer basket and cook at 200c/400f of air fry for approx 30 minutes until golden and crispy, shaking the basket a couple of times through cooking and spray with more low calorie spray as needed.
- Season with salt to your desired taste.
