Homemade Fab Ice Lollies

Homemade Fab Ice Lollies - a make at home version of the popular frozen UK treat, combining the flavours of coconut vanilla and strawberry water ice and dipped in milk chocolate and sprinkles.

One of my favourited ice lollies growing up in the UK was the Nestle Fab Lolly (originally owned by J Lyons & Co). A popular choice among kids and even adults.

Here in Canada, we don't get anything similar and I figured how hard could it be to create my own version that I could enjoy at home.

Now we can all enjoy this frozen treat in the hot summer months.

A couple of things to note before you make these. 

Firstly is the amount of chocolate and coconut oil we use to melt. The final ice lolly only actually uses half of that amount. The reason we melt more than we need is that we need it deep enough for dipping.

The coconut oil is a vital ingredient to make the melted chocolate really runny so that it coats the tip of the ice lolly in a thin layer, if you don't add the coconut oil, the melted chocolate will be much thicker and you will end up using more. 

Don't worry about what is left of the melted chocolate being wasted, add it to a tub and it is great for a magic shell to drizzle on some ice cream, just warm the amount you want to drizzle in the microwave at 10-second intervals until liquid like and you can drizzle or dip.

Another thing I need to mention is that it is really important you ice lollies are fully frozen when you dip, don't allow them to defrost too much, if they start to melt, the chocolate won't coat them and will drizzle off and then ruin your melted chocolate dip.

The best way to get these prepped for dipping is once the lollies are fully frozen, remove from the moulds and place on a tray lined with wax paper.

Place the tray bake in the freezer allowing the tray to get really cold and the lollies really solid. That way when you remove them from the freezer the ice cold tray will prevent them from defrosting while you dip.

Homemade Fab Ice Lollies - a delicous frozen treat combining the flavor of vanilla coconut and strawberry water ice, dipped in chocolate and sprinkles

Ingredients

• 1.5 cups (360ml) of coconut milk (carton) (I use the Silk brand)
• 5 tbs of granulated sweetener (I used erythritol)
• 1 teaspoon of vanilla extract
• 1 packet of strawberry no sugar jelly (jell-o)
• 100g (3.5oz) of milk chocolate chips (can use dark chocolate if you prefer)
• 1 tbs of coconut oil
• 1 tbs of rainbow sprinkles

Instructions

1. Whisk the coconut milk with the sweetener and vanilla until fully dissolved.
2. Add to the the ice lolly mould (filling about ⅔ of the way, add lid, add in the sticks and place in freezer until frozen.
3. Once that part is fully frozen, make the jelly up to package instructions, if mix is still quite warm, let cool slightly, then pour into the moulds so that it fills the ice lolly moulds. You should now have ⅔s white and the ⅓ red with the jelly mix.
4. Place back in the freezer until fully frozen.
5. Carefully remove ice lollies from their moulds and place on a wax paper lined tray and keep in the freezer. (NOTE: It's important that ice lollies are fully frozen when you dip in the chocolate, otherwise any liquid that drips off them will ruin the chocolate mixture.)
6. Add the chocolate to a bowl over a saucepan of water (ensuring the water doesn't touch the boil).
7. Heat the water stirring the chocolate until fully melted.
8. Remove from the heat and then stir in the coconut oil until melted. The dipping chocolate should now be really runny.
9. Add the melted chocolate to a tall then vessel that will fit the ice lolly for dipping.
10. Dip a ice lolly in the chocolate, allowing any excess to drip off and sprinkle with a few sprinkles.
11. Place on a clean tray lined with wax paper. Repeat with the remaining lollies. Then once chocolate is set, you can place in the freezer. I place in a large freezer tub, with sheets of wax paper between them.
