Salmon Fillets topped with Sweet Chilli Sauce, wrapped in Filo with a pinch of sesame seeds for these delicious golden pastry parcels.

Wild Caught Salmon
For this recipe I prefer to use wild caught salmon where possible, it just tastes so much nicer and is better nutritionally too.
Sides for Thai Salmon Filo Parcels
For sides I like to pair this with some jasmine rice and stir fried vegetables such as:
Onion, sliced
Carrots, sliced into thin batons
Courgette (Zucchini), sliced into thin batons
I just fry the vegetables in low calorie spray, then add in a little sesame oil and soy sauce towards the end.

Had this for dinner tonight, after a bit of a struggle with filo pastry, it was delicious and definately not like being on a diet, had it with a huge salad and your curried coleslaw and boiled potatoes, was lovely.

I had this again for dinner as it was so popular the first time, I cooked my salmon first as I like it well done, it broke up in the pan, but I just made 5 smaller parcels but using the same amount of filo pastry, once again it was lovely, although I am still coming to grips with the filo pastry.

After having this a few times, it's now one of my favourite meals. I also like adding a wee bit of lemongrass. Sometimes, if I'm low on syns, I'll make the salmon parcel with baking paper instead of filo and serve it on a bed of jasmine rice with the juices poured over - still so tasty!
