Honey and Mustard Chicken

Slimming Eats Recipe

Serves 2

Extra Easy – approx 2.5 syns per serving

Original – approx 2.5 syns per serving

Ingredients

6 chicken drumsticks (skin and any fat removed)

1 tablespoon of honey (3 syns)

2 teaspoons of dijon mustard (1 syn)

1 tablespoon of white wine or rice vinegar

1 teaspoon of sugar (1 syn)

50ml of chicken stock

3 garlic cloves crushed

Frylight or Pam spray

Salt to season

Fresh chopped Italian Parsley

Method

Preheat oven to 180c or 350f. Place chicken drumsticks in an oven proof dish. Season with Salt  and spray with some Frylight or Pam spray,

In a small bowl, mix together the honey, mustard, vinegar, sugar, chicken stock and crushed garlic . Pour over chicken and bake in the oven for approx 30-40 mins until chicken is golden and cooked through.Keep taking the chicken out at intervals through cooking time to baste with the sauce.

Serve your chicken topped with fresh chopped Italian Parsley.

    I don’t see why not, will prob be lovely done in the slow cooker, as it will absorb all the flavour. I would use chicken thighs though, with fat and skin removed.

    you can get white wine vinegar in the vinegar aisle of most supermarkets. The rice vineger is usually with the soy sauce and things like that.

    could u use sweetener instead of sugar to reduce the syns or would it not taste as good? or could u just omit it altogether?

    You do need the sugar I think, as that mixed with the honey, gives the chicken the nice golden colour. You could try it without, but for the sake of just 1 syn I would add it ;)
