Baked Spicy Kibbeh

Slimming Eats Recipe

Serves 4

Extra Easy – syn free per serving

Ingredients

200g of bulgur wheat

400g of extra lean lamb mince (or use extra lean beef mince)

1 onion, finely chopped

1 clove of garlic, crushed

1 small carrot, finely chopped

1 courgette, finely chopped

1 red pepper, finely chopped

2 teaspoons of paprika

2 teaspoons of chilli powder

2 tablespoons of tomato paste

freshly chopped Italian parsley

freshly chopped coriander

garlic black pepper

Greek spice mix (I buy this from the spice section at the supermarket)

 

Method

Cover the bulgur wheat completely, in cold water and allow to soak for about 30mins.

Completely drain of any remaining liquid, and then add the bulgur wheat, 200g of the lamb mince, some garlic pepper and a handful of fresh parsley to a food processor and blend the mix all together. Set aside.

Spray a frying pan with Frylight or Pam spray, add the remaining lamb mince, onion, garlic, carrot, pepper and courgette and cook until browned.

Add the chilli powder, paprika, tomato paste, Greek spice mix  and some freshly chopped coriander. Stir thoroughly to evenly cover. Allow meat to cool slightly

Preheat oven to 200c or 400f

Divide your bulgur wheat mixture up into 8 even sized portions like below

Take one of the portions and flatten it out into a pancake type shape, add a spoonful of the spicy lamb/vegetable mix and the mould up over the lamb/vegetable mixture to create oval shaped balls. Continue for all other portions and place them on a baking tray sprayed with Frylight or Pam spray

Spray over the top with more Frylight or Pam spray and place in the oven and bake until golden all over and cook through, approx 25-30 mins.

Serve on a bed of mixed leaves with a spicy tomato sauce (see recipe below

Spicy Tomato Sauce

Serves 4

Extra Easy – 0.5 syns per serving

Ingredients

400ml of passata

200ml of chicken stock

1 onion, chopped

fresh ginger, grated

2 cloves of garlic, crushed

2 teaspoons of cumin

2 teaspoons of coriander

1 teaspoon of chilli powder

1 teaspoon of paprika

1/2 teaspoon of cayenne pepper

2 teaspoon of sugar (2 syns)

Frylight or Pam spray.

 

Method

Spray a frying pan over a medium heat with some Frylight or Pam spray

Add the onion, garlic, some fresh ginger, and cook for 2-3 mins until softened.

Add the passata, all the spices and sugar and bring to the boil. Reduce heat, cover and simmer for approx 30 minutes.

Top with some freshly chopped coriander.
