Put your waffle maker to good use, with this delicious Easy Waffle Omelette
With the weather being glorious today, we spent most of it, chilling out in the garden.
I filled up the paddling pool for the kids, well I say kids, but only my youngest went in it, cooling down from the heat, while occasionally freaking out over a bug that was bothering her.
Most of their food today, consisted of a picnic, snack type food, that they could grab and go when they felt like it.
When it came to dinner time, I wanted something quick and easy, the planned spaghetti and meatballs went out the window.
That is when my waffle maker came to the rescue. I've had one for a good few years now, they are kind of a necessity living in Canada, but up until recently I only had one that makes the round type waffles and it had no temperature control on it. So recently we upgraded to one with all the bells and whistles and it's fantastic.
We loved the Waffle Hash Brown Pizza, I made recently. Seriously yummy if you have a pizza craving but have already used your HEb and you can literally add any toppings you like. I just stuck to a traditional pizza sauce and mozzarella, but pepperoni would be amazing or even Hawaiian style. I'm looking forward to experimenting with different variations.
I also love sweet waffles, especially for breakfast with fruit and maple syrup or if you are feeling extravagant, maybe even a couple of slices of bacon - perfect!!
My favourite is these Belgian Style Waffles, but I like to vary them up sometimes too with Chocolate Waffles, French Toast Waffles or in the fall Pumpkin Waffles (although sometimes I will revert to canned pumpkin and have them any time of year).
I've been meaning to try an omelette in the waffle maker for quite some time, but it never really happened. Until tonight that is, the waffle maker was still out on the counter from making waffles earlier for the kids, so a simple waffle omelette for dinner just seemed like a perfect choice.
You really can add any kind of mix-ins you like for your omelette, A choice for some cheese, make it vegetarian-friendly or add a protein of choice. Just be careful not to go too heavy on the mix in, as otherwise, it is likely to stick to the waffle pan and look like a wet scrambled mess and not the perfect waffle omelette you had hoped for.
I do recommend a waffle iron with a temperature control to - Like this Andrew James Belgian Waffle Maker.
A temperature control might seem unnecessary, but it really does come in handy if you are going to be using it for different things. For example, when doing hash brown waffles I use a high temp, but for this waffle omelette a medium temp. I also prefer the square shape waffle, it just comes in more handy for various recipes to have the square shape. The round waffle makers should work fine though too, if that's what you have.

Once the waffle omelette is cooked, you can serve it just as it is with a salad, or with some Perfect Chips or add some yummy toppings like I have. I went for chopped tomatoes, mashed avocado, coriander, a little grating of cheddar (part of my Healthy Extra A choice) and then some Greek Yoghurt which I mixed with lemon juice and a little salt for a soured cream. It was actually pretty darn good and I am already thinking about other omelette's I can make, definitely a really cheesy one next time.

Easy Waffle Omelette
This recipe is gluten free, vegetarian, Slimming Eats and Weight Watchers friendly
WW Smart Points - 1 (for omelette without toppings)
Ingredients
- 3 eggs
- ½ cup (120ml) of fat free cottage cheese
- 1 tbs of chopped white onion
- 2 tbs of chopped red pepper
- 2 tbs of chopped green pepper
- salt and black pepper
- spray oil
Instructions
- Heat waffle iron (I used the medium heat)
- Add eggs and cottage cheese to a blender and blend till smooth.
- Mix in the peppers and onion and season well with salt and black pepper
- Spray waffle iron with spray oil (make sure you spray both sides)
- Pour mixture evenly onto waffle iron, spooning the peppers and onion evenly on each waffle. Don't be tempted to overfill with egg mixture as it puffs up as it cooks.
- Close waffle iron and let it cook for approx 4-5 minutes. Don't try and open iron too soon, or you will result in a mess. The key is to let it doe it's thing.
- Enjoy as is with a salad or sides of your choice or add toppings as I have done. (see notes)

I have bought a variable temperature waffle iron and can't wait to try this savoury egg omelette waffle ! Although it serves one how many waffle plates does it fill? Two?

It should fill 4 compartments of a 4 square wafffles iron. Don’t be tempted to over fill one compartment as it rises slightly as it cools. Enjoy!!

if lactose intolerant what can be used instead of cottage cheese?

you could try with a lactose free yoghurt but I haven't tested this so can't say how it would work out.
