One Pot Sausage and Lentil Casserole - super easy recipe that the whole family will enjoy

This sausage casserole is packed with flavour, cooked in one pan and combines simple ingredients such as sausage, vegetables, and lentils in a sweet tangy smokey sauce that the whole family will just love.
Coca-cola may seem like an odd ingredient in a savoury dish, but it makes a perfect sweet kind of BBQ sauce that just compliments the dish really well. I choose not to use the diet kind in this recipe, as I generally try to avoid anything with aspartame and it really isn't too many when divided up.

As for the sausage you use, any chunky sausage will work fine, go for one low in fat that is available to you. I've made this so many times now with various different sausages from Italian Chicken to regular Pork and all work amazingly well.
For the lentils, you want a chunky variety of lentil, like brown or green lentils, as those will hold their shape in this Sausage and Lentil Casserole.
Red lentils are more of thickening ingredients and perfect in things like dhal curries, so I don't recommend them for this One Pot Sausage and Lentil Casserole.

Do you own an Instant Pot? Then this can also be cooked in an Instant Pot as well as stove top.
If you haven't heard of an Instant Pot you are seriously missing out. It is the best kitchen gadget I have purchased. I would even put it above my actifry and that's saying something. I love this thing so much, that I almost use it EVERY.SINGLE.DAY.
It seriously tops every kitchen appliance I have ever bought.

It is basically a 7in1 cooker, and it slow cooks, pressure cooks, saute's, has settings for soup, chilli, rice, porridge and even makes yoghurt (I haven't tried that yet).

How can I add a ⅓ vegetables to this One Pot Sausage and Lentil Casserole?
There is already some vegetables in this dish, but you could also serve alongside some additional vegetables of your choice, like sauteed greens (like cabbage, Brussels or green beans) or even some sauteed peppers and onion.

Hi I'm making this this week, looks lovely, however I don't have canned lentils....just uncooked lentils. How many of those would I need please?

Hi there, uncooked lentils normally make around double the amount when cooked from dry, so you can do a slight guess from that to how much you will need. Hope that helps 🙂

I would use some maple syrup instead of the cola. Tinned Tomatoes won't quite give the same sweetness to the sauce.

I’m making this in the slow cooker- do I put all ingredients in the slow cooker raw? Or follow all the steps and cook it all before putting in slow cooker?

Looks amazing and going to try it this weekend, one wee thing though, you've said 2.5 syns per portion but 10 syns for sausages and 7 syns for coke don't make 2.5 syns per portion!

Hi Amanda, it is correct at 2.5 syns per serving. The syn value for the sausages is incorrect. It should be 2 syns and I rounded the entire recipe up to 10 syns for 4 servings. That was where the 10 syns came from lol. The syns per serving, however, will totally depend on the sausages you use. I've used various ones, each time varying in syns. Enjoy, it's really easy to make and a family favourite.

Hi, so long as all ingredients were measured precisely, it shouldn't need cornflour (it's a regular here) and I've not had issues with too much liquid. The tomato paste (puree), along with the lentils will thicken it up nicely, I recommend just letting it bubble with the lid for a little bit and it should cook off any excess liquid.
