Measuring out the 40g of oats you are allowed as a healthy extra b choice, can sometimes be a little disappointing, as you think to yourself, that is never going to fill me up.
That's why I LOVE pumpkin oatmeal. The pumpkin really bulks out the serving of oats and makes it a much more satisfying bowl, as well as make the oatmeal, appear silky and colourful.
Pumpkin is one of my favourite things to add to my oatmeal and best of all is that it's also a speed food.
Okay, pumpkin, of the fresh variety anyway can be pretty hard to get your hands on when it's not in season and that's were canned pumpkin comes to the rescue.

I always have a can on hand in my pantry, as you never know when I may want to make one of these delicious pumpkin recipes:

But where on earth can you buy canned pumpkin puree? well, the easiest place, of course, is Amazon. But some of the larger supermarkets sell it too, usually in the international or baking aisles. Just make sure you buy the 100% pumpkin puree, and not pumpkin pie filling which is loaded with sugar.
It's always handy to have a can or two in your cupboard so that can make one of the recipes above. Including this delicious Pumpkin Oatmeal.

How can I add a ⅓ vegetables to this pumpkin oatmeal?
As well as the pumpkin that is mixed with the oatmeal, I also like to top with some apple cubes and fresh blueberries. They add a delicious sweetness to the top and really finish off this Pumpkin Oatmeal Breakfast Bowl.
