This Baked Sweet Plantain is a simple, delicious side dish that perfectly balances sweet and savoury flavours. Ripe plantain is lightly seasoned with paprika and roasted until beautifully golden, making it the perfect accompaniment to Caribbean-inspired dishes, grilled meats, rice dishes and so much more.

If you've never cooked with plantain before, this is a great recipe to start with. Although they're related to bananas, plantains are starchier and are always cooked before eating. As they ripen, they become naturally sweeter, making them perfect for roasting until caramelised and tender.

Ingredients Notes
To make this recipe you will need the following ingredients:
- Ripe Plantain: Choose a plantain with yellow skin and plenty of black spots. As plantains ripen they become naturally sweeter, making them perfect for this recipe. Green plantains are much firmer and are better suited to savoury recipes such as tostones.
- Paprika: Regular paprika adds a mild, sweet flavour and beautiful colour. I don't recommend smoked paprika here, as it can overpower the natural sweetness of the plantain.
- Sea Salt: Just a small pinch enhances the sweetness of the plantain and balances the flavours.
- Olive Oil Spray: A light spray helps the plantain caramelise beautifully without using lots of oil.
Once you've gathered all the ingredients and prepared them accordingly, you're all set to create this easy and delightful recipe.

Variations and Substitutions
This baked sweet plantain is easy to customise with different seasonings depending on what you're serving it with.
- Adjust the seasoning: Add a pinch of garlic powder, onion powder or black pepper for a more savoury finish.
- Add some heat: Sprinkle with a little cayenne pepper or chilli flakes for a sweet and spicy combination.
- Try different spices: Ground cinnamon, allspice, cumin or a pinch of curry powder all pair beautifully with ripe plantain.
- Use a different oil: Avocado oil spray or another neutral cooking oil spray can be used instead of olive oil spray.
- Finish with fresh herbs: Sprinkle with chopped coriander (cilantro) or parsley before serving.
- Add citrus: A squeeze of fresh lime juice just before serving adds a delicious burst of freshness.

I dont think the previous reviewer is familiar with plantian. They are NOT bananna and not somethong you can eat raw! Tomatoes are more of a fruit and not syned when cooked.

ahhh thanks so much Annmarie - I am so glad you enjoy the recipes. I must admit I didn't try plantain until I moved to Canada back in 2008, I love it now. We get such a great selection of different vegetables here that I love being able to really add variety to my meals.
