Mozzarella, Tomato and Basil on Pitta Bread

I have been craving some mozzarella, tomato and basil ciabatta drizzled with olive oil, but of course would end up well over my daily allowance. So I decided to come up with a version that would keep me in my daily allowance and this worked for me.
I recently bought some of these – Joseph’s Flax, Oat Bran and Whole Wheat Pita Bread.
We can have two of these and they are great for sandwiches or bases for pizzas. Obviously for those of you who can’t get these, you can use one of the other qualifying pita bread or just use whole wheat toast.
Ingredients
- 2 mini Joseph’s Flax, Oat Bran and Whole Wheat Pita Bread
- 45g of mozzarella
- 2 tomatoes, sliced
- 1 teaspoon of good quality balsamic vinegar
- 1 teaspoon of extra virgin olive oil
- fresh basil
- salt
- Frylight or Pam spray
Method
Preheat oven to 200c or 400f (gas mark 6)
Spray the pita breads with some Frylight or Pam spray, place on a baking tray and bake until crisp.
Top with broken up mozzarella, tomatoes slice seasoned with salt.
Mix together the balsamic and olive oil and drizzle over the tomatoes and mozzarella and then top with some fresh basil.
Delicious!!
