Tender seasoned chicken with avocado, ripe sweet tomato and melted mozzarella for the ultimate grilled cheese sandwich
This is one of my favorite grilled sandwiches to make, the combination of all the ingredients together is delicious. If you are vegetarian try added a little green pesto and spinach instead of the chicken. It is equally delicious!!
I usually make this for lunch, but this would be great with a big mixed salad and some oven baked fries for a indulgent main meal.
To cook you can use a cast iron pan or a grill pan, if you have a panini press that would work great too.

Grilled Chicken, Avocado, Tomato and Mozzarella Sandwich
Tender seasoned chicken with avocado, tomato and mozzarella for the ultimate grilled sandwich
Ingredients
- 100g (3.5oz) raw boneless skinless chicken breast, sliced into small strips
- ½ teaspoon of paprika
- ½ teaspoon of dried basil
- 2 slices of whole wheat or low calorie bread of choice
- 40g (1.5oz) of sliced avocado
- 1 ripe medium tomato, sliced
- 50g (2oz) of mozzarella
- Low calorie spray
- salt and black pepper
Instructions
- Spray a frying pan over a medium high heat with low calorie spray.
- Add the chicken and paprika, basil, salt and black pepper and fry till golden and cooked through.
- Heat a cast iron or grill pan over a medium high heat
- Place the two slices of bread on a plate or board.
- Spray one piece of bread on one side with spray oil and place this spray side down on the pan.
- Then add the mozzarella, tomatoes, chicken, avocado, season with a little more salt and pepper and then place the other slice of bread on top and spray the top of the sandwich with spray oil.
- Carefully keep checking the underside of the sandwich and when golden, carefully flip over and toast the other side until cheese has melted.
- Enjoy!!
