Ingredients Notes
To make this recipe you will need the following ingredients:
- Sweet Potato: Grate the sweet potato using the coarse side of a box grater. No need to peel it if the skin is thin and clean, but you can if you prefer.
- Zucchini (Courgette): After grating, squeeze out as much excess moisture as possible using a clean tea towel or kitchen paper. This helps the bites hold together and become nicely golden.
- Reduced Fat Cheddar: Adds plenty of cheesy flavour while keeping the recipe lighter. You can use full-fat cheddar if preferred.
- Egg: Helps bind all the ingredients together so the bites keep their shape while baking.
- Salt and Black Pepper: Season to taste to bring out the natural sweetness of the vegetables.
- Olive Oil Spray: Lightly spray the baking tray and the tops of the bites to help them crisp up and turn beautifully golden in the oven. A small drizzle of olive oil can be used instead if preferred.

These sweet potato and zucchini bites are easy to customise with different cheeses, vegetables and seasonings to suit your taste.
- Try different cheeses: Swap the cheddar for mozzarella, Red Leicester, Colby Jack, Gruyère or a mature white cheddar.
- Add extra vegetables: Finely grated carrot, parsnip or butternut squash all work well. Just be sure to squeeze out any excess moisture if needed.
- Boost the flavour: Add a teaspoon of smoked paprika, garlic powder, onion powder, Italian seasoning or dried herbs.
- Add some heat: Stir in a pinch of chilli flakes or a finely chopped jalapeño for a spicy kick.

These cheesy sweet potato and zucchini bites are great for lunches, snacks, light meals or adding to a picky plate.
- Serve in a mixed salad bowl with lettuce, cucumber, tomatoes, red onion, sweetcorn and grated carrot, then drizzle with a light creamy mayo dressing or yoghurt and herb dressing - check out my ranch dressing or poppyseed dressing or if you like a spicy option, try this honey sriracha yoghurt dip
- Add to a picky plate with fresh vegetable sticks, fruit, crackers, cheese, boiled eggs, pickles or olives.
- Enjoy with Homemade Pizza Sauce, marinara sauce, salsa, sweet chilli sauce or a garlic yoghurt dip.
- Serve alongside some soup instead of bread for a filling lunch.
- Add to lunchboxes with salad, fruit and a small pot of dip.
- Serve as a side dish with grilled chicken, fish, burgers or your favourite main meal.
- Make them part of a brunch plate with eggs, avocado and grilled tomatoes.
Storing and Reheating
To Store: Allow the bites to cool completely, then transfer them to an airtight container and store in the fridge for up to 3 days.
To Reheat: Reheat in the oven or air fryer until heated through and lightly golden. Alternatively, microwave until piping hot, although they won't have quite the same texture.

I made this for a Halloween get together tonight. It was a BIG hit! I was amazed the finished product actually resembled the photos! Lol, I don't always have that kind of luck.
Only thing I added was instead of using just pepper, I used a garlic & pepper grinder...because well, don't most things need garlic? Turned out great! Even people who don't like sweet potatoes or zucchini liked it!
