If you buy a jar of green pesto, most will cost you about 4 syns for a teeny tablespoon which doesn’t go very far stir into your pasta. This delicious dish of Zucchini and Linguine uses my homemade Arugula, Basil and Spinach Pesto and gives you a decent and filling serving for a reasonable about of syns.
This recipe is vegetarian, Slimming World and Weight Watchers friendly
Slimming Eats Recipe
Green – 1 HEa and 6 syns per serving
Extra Easy – 1 HEa and 6 syns per serving
- 140g of linguine pasta
- 2 courgettes (zucchini), spiralled
- Arugula, Basil and Spinach Pesto (2xHEa's and 12 syns)
- spray oil
- salt and black pepper
- Place pasta in a saucepan or boiling hot salted water and cook until al dente.
- Spray a frying pan with some spray oil over a medium high heat, add the spiralled courgette, season with salt and black pepper and saute for a few minutues, until softened.
- Drain pasta, add in the courgette and the pesto and toss to evenly mix.
- Serve and enjoy!!
