One of the great things about overnight oats, is the fact it can all be prepared the night before. So for those that are rushed for time in the mornings, it’s a great breakfast, as you can literally just grab it and go.

Peanut butter and Jelly might seem like an odd combination to some, and many years back I may of agreed with you.

But after finishing my 3 year art degree back in 2000 (I am showing my age now). I did a student program where you could spend the summer in the USA working on a Summer Camp.

I ended up in a beautiful area of Upstate New York, right in the Adirondack Mountain range where the summer camp was set upon a beautiful lake.

It was a great experience, and if there are any students reading this right now, I highly recommend doing it at the end of your last year. A great opportunity for seeing another part of the world and having an adventure before you set into your career.

The summer camp I stayed at, would be the thing of dreams come true for most kids back in the UK. These kids had all kinds of activities planned for them each day. Which is not surprising really with the price of a 4 week camp placement, it’s enough to make your jaw hit the ground. Extremely lucky kids really.

Here I first came witness to the craze of a peanut butter and jelly sandwich.

However jelly in the USA is not the wobbly stuff that we tend to have with custard and cream in a trifle. In the US that is called Jell-o and well jelly is actually jam.

So when you hear of a peanut butter and jelly sandwich, it is infact a peanut butter and JAM sandwich and of course I had to try one. I have to say I can understand the craze, it’s a pretty yummy combination (although maybe not to some).

Here on this side of the Atlantic, we are obsessed with all things peanut butter, peanut butter flavoured everything is on every corner, literally!! Especially chocolate, they do love their peanut butter chocolate hear.

In the summer I even tried a peanut butter and jelly burger. Yes, you did read that right.

Not in the slightest Slimming World friendly (far from it), but was one of those things I just had to try. It sounds pretty disgusting when you think about it, but it really tasted delicious. The jelly (or jam) was like a spicy red jalapeño jam that just was heaven, it was so good and well worth the day of plan to sample it.

So for my first instalment of overnight oats, it had to of course be Peanut Butter and Jelly Overnight Oats. When I made this bad boy up, I really had to refrain from digging a spoon in straight away. After all it wouldn’t really be overnight oats, if I didn’t leave it overnight.

I was pretty excited when I got up in the morning, no having to prepare breakfast, which is a pretty rare occurrence in my house. I love to cook, but it was nice to just brew my mug of coffee and sit down and dig in.

Seriously this was tastefantastic (is that even a word?), I am making it one right here, right now.

Now for the peanut butter, I didn’t use the jarred stuff because it’s pretty high in syns. Even the 100% natural peanut butter will set you back 9.5 syns for 2 tbs, and as much as I love breakfast, I don’t want to spend that many syns in the morning.

Instead I use PB2 Powdered Peanut Butter which is a an awesome low syn peanut butter alternative. 2 tbs of the powder is 2.5 syns (45 calories), you just mix it with a little water and you have a low syn peanut butter.

If you eat it on it’s own it isn’t going to be exactly like peanut butter, but if you add it to something like these Peanut Butter and Jelly Overnight Oats, it’s great for giving that peanut butter flavour. There are various other brands you can check out on Amazon, there is even a PB2 Powder Chocolate Peanut Butter.

I also use Sukrin:1 to sweeten this Peanut Butter and Jelly Overnight Oats. Feel free to  use another sweetener if you prefer, just be aware the taste may differ. I like Sukrin, because it is the only sweetener I have found that has no aftertaste. So worth investing in some if you haven’t already.

This Peanut Butter and Jelly Overnight Oats is gluten free and vegetarian friendly. It isn’t dairy free, but if you use a dairy free yoghurt or even a dairy free milk instead of the yoghurt, then you can adapt it to a dairy free version.

This breakfast has a decent serving of protein too, so even more reason to make this and enjoy!

Low Syn Peanut Butter and Jelly Overnight Oats

Low Syn Peanut Butter and Jelly Overnight Oats

Yield: SERVES 1
Prep Time: 15 minutes
Total Time: 15 minutes

Start your day with this easy no-cook delicious Peanut Butter and Jelly Overnight Oats

Ingredients

  • 40g (1.5 oz) of oats
  • 1/2 cup (120ml) of fat free plain Greek yoghurt
  • 1/2 tsp of pure vanilla extract
  • 3/4 tbs of sukrin:1
  • 2 tablespoons of no added sugar raspberry jam or spread - 1 syn
  • 2 tablespoons of PB2 Powdered Peanut Butter](http://amzn.to/2j6GQuJ)
  • 1/2 cup of Fresh raspberries

Instructions

  1. Add the oats to a bowl, stir in the Greek yoghurt, vanilla extract and sukrin:1 and a few tablespoonsStart your day with this delicious Peanut Butter and Jelly Overnight Oats of water to loosen (or use some milk from your HEa if you prefer).
  2. Place in a glass or jar
  3. Add half the raspberries
  4. Mix the no added sugar jam with about 1 tbs of water.
  5. Spoon this on top of the raspberries
  6. Add the PB2 to a small bowl, slowly add a few drops of water at a time and keep mixing until you have a smooth consistency (not too thick)
  7. Spoon this on top of the jam.
  8. Top with the remaining raspberries.
  9. Place in the fridge and it will be ready for you to dig in a spoon and enjoy in the morning.

  • Slimming World - 1 HEb and 3.5 syns
  • WW Green Smart Points - 8 per serving
  • WW Blue Smart Points - 7 per serving
  • WW Purple Smart Points - 3 per serving
  • Dairy Free - use a dairy free yoghurt (adjust syns accordingly)
  • Gluten Free - use gluten-free oats

    Sounds amazing… think I’ll try it tomorrow morning. Getting bored with my usual Overnight Oats… I’m so pleased with just the sound of this recipe that I tried to give it 5 stars but for some weird reason I can’t get the 5th star to click… sorry
    One little tip: Oats are naturally gluten free so there’s no need to suggest people swap for “gluten free oats” although I know some shops are happy to scalp folks who don’t know

    Hi Victoria. Thanks for your comment. Unfortunately not all oats are gluten free, many are cross contaminated, so for those with serious gluten intolerances, they do need to make sure the oats they use are gluten free verified.
