Honey Teriyaki Salmon

Slimming Eats Recipe

serves 2

Extra Easy –  1.5 syns per serving

Ingredients

2 Salmon fillets or steaks

4 tablespoons of dark soy sauce

4 tablespoons of light soy sauce

1 tablespoon of freshly grated ginger

1 clove of garlic, crushed

1 tablespoon of honey (3 syns)

little juice from a fresh lemon (about 1 tablespoon)

Frylight or Pam spray

for noodles

140g of egg noodles

2 cups of frozen wax beans (yellow and green) and carrots (or use other veg of your choice)

couple of dashes of light soy sauce

Method

Add the soy sauce, honey, garlic, ginger and lemon juice to a bowl and mix to make the marinade.

Place salmon in a flat dish and cover with the marinade and refrigerate for at least 1 hour.

Add the noodles to a large saucepan of water, to soften and then drain and set aside.

Remove the salmon from the marinade and discard the marinade.

Spray a frying pan or skillet over a medium heat with some Pam or Frylight spray and cook the salmon fillets on each side, until nice and golden, ensuring the salmon is cooked through.

In the meantime  spray a wok with some Pam spray or Frylight and add you frozen wax beans and carrots and cook for approx 3-5 mins, stir in the noodles, add a couple of dashes of light soy sauce.

Serve the Salmon on a bed of the noodles and veg.

Enjoy!!!
