Fish and Chips

Slimming Eats Recipe

Serves 2

Extra Easy – 1 HEb and 1 syn per serving

Ingredients

500g of white fish of your choice (cut into two equal sized fillets0

2x60g of whole wheat bread, lightly toasted (2xHEb’s)

salt and black pepper

couple of handfuls of fresh parsley

2 teaspoons of chilli powder

2 eggs, beaten

 

for the chips

I use this method, but cut the chips by hand to make chunkier. The amount of potato is up to you How to cook perfect baked oven fries

 

for the tartar sauce

4 tablespoons of extra light mayo (2 syns)

little bit of juice from a fresh of a lemon

1 large pickled gherkhin

1 shallot

salt and black pepper

 

Method

Preheat oven to 200c or 400f (gas mark 6)

Prepare chips as in link above, and have these cooking for approx 20 mins before adding your fish to the oven, as the chips will take long.

Once bread is cooled from lightly toasting, add it to a food processor, along with the parsley, chilli powder and a little salt and pepper and blitz until it resembles bread crumbs.

Using one hand, dip the fillets into the egg, drop into the breadcrumbs and cover over with the breadcrumbs using your other hand. Repeat this process again (this ensures the fillets are well covered in the breadcrumbs.

Add to a baking tray sprayed with Frylight or Pam spray and then spray over the top with more Frylight or Pam spray.

Place in the oven along with your chips. Carefully turn over the fish with a spatula half way through cooking time. Cooking time for the fish is approx 20 mins.

For the tartar sauce add all the tartar sauce ingredients to a mini food processer and blitz for a couple of spins of the blade (if you dont have a mini food processor, you can finely slice the gherkin and shallot with a sharp knife)

Serve with a side salad.

    i love this but substitute the breadcrumbs for cous cous to make it syn free, my fav dinner! lol xx
