Red Swiss Chard and Potato Bake

Ingredients
- 600g of potatoes (I used yukon golds), peeled a cut into chunks
- 400g of sweet potato, peeled and cut into chunks
- bunch of red swiss chard, roughly chopped
- salt
- garlic pepper
- sprinkling of paprika
- 200ml of vegetable stock
- zest of lemon
- Frylight or Pam spray
Method
Preheat oven to 200c of 400f
Place the white potato in a steamer above boiling hot water
Steam for approx 5 mins, until slightly soft. (you still want them a little firm.
Add to a oven proof dish with the sweet potato, sprinkle with some salt, garlic pepper, paprika and spray over the top with some Frylight or Pam spray. Give the potatoes a shake to evenly coat
Place in the oven to bake until lightly golden (approx 30 mins).
Remove the potatoes from the dish and set to the side.
Place the swiss chard in the oven proof dish and pour over the stock.
Add the potato back to the dish and add a little zest from a fresh lemon.
Place back in the oven a bake for an additional 15 mins.
