Slimming Eats Recipe

Salmon, Brussels and Squash Patties
makes 12 patties

Ingredients
- 300g of butternut squash
- approx 15 brussel sprouts, shredded (or use some kale or spinach)
- 250g of cooked salmon
- 1 tablespoon of ghee or other oil of choice (6 syns)
- 1 tsp of ground cumin
- 1 tsp of ground coriander
- 1 tsp of chilli powder
- ½ tsp of turmeric
- ½ tsp of garam masala
- juice of half a lemon
- 1 clove of garlic, crushed
- some grated fresh, ginger
- salt and black pepper
- 1 egg
Method
- Place the squash in a steamer above some boiling hot water and steam until fork tender, remove and set aside to cool.
- Add the ghee to a pan and saute the shredded brussel sprouts for a few mins.
- Preheat oven to 200c or 400f (gas mark 6)
- Add the brussels, along with the rest of the ingredients to the squash and mix all ingredients together well. (you don't need to mash he squash until smooth, i prefer it to have some chunks, which makes the patties more rustic)
- Form into 12 equal sized patties and place on a baking tray line with parchment.
- Bake in the oven for approx 30 mins, turning half way through. They will be lightly golden on both sides.
- These are great served as the main part of a meal or on he side.
- They also work great without the salmon for a veggie side dish.
