Lemon Chicken Breasts, where juicy chicken meets a zesty burst of citrus topped with a delicious carrot basil sauce.
Ingredients
- 240ml (1 cup) of homemade carrot soup - for the sauce click on link for recipe
- handful of fresh basil leaves, chopped
- salt and black pepper
- zest and juice of half a lemon
- 2 small chicken breasts (180g/6.3oz each), each butterflied in half to create two thin fillets.
- 2 teaspoons of olive oil
- olive oil spray
Instructions
- Add the soup to a small saucepan and heat gently over low heat, stirring occasionally.
- Mix together the lemon zest, lemon juice, and olive oil
- Add the chicken to the mixture and marinate for 30 minutes, ensuring it is thoroughly coated.
- Spray a frying pan with olive oil spray and heat over medium-high heat.
- Remove the chicken from the marinade and season generously on both sides with salt and black pepper.
- Add the chicken to the pan and fry until golden on each side and cooked through.
- Stir the some of the fresh basil into the soup and reserve the rest to garnish.
- Serve the sauce over the chicken, garnish with the reserved basil.
- Enjoy with your choice of sides.
