Delicious Cheesecake Dip with Apple Nachos - great for sharing or not!!
You are a planning a night in front of the tv watching a movie or catching up with your favourite tv show and fancy something picky. So what can you make, that great for sharing, feels like a treat and is not too high in calories. Let me introduce you to this amazing Low Cheesecake Dip with Apple Nachos. Seriously it is soooo good and taste JUST. LIKE. CHEESECAKE.
I recently made a discovery. I wanted to make a dessert that used quark, but couldn't get any quark at all at the usual grocery store I buy it from, so improvising, I thought I'd try some blended cottage cheese.
Now let me just say before you go freaking out. I HATE cottage cheese. Seriously the texture is just bleurgh. But blending in one of my quiche recipes like this amazing Spiralled Zucchini Quiche, you wouldn't even know it was an ingredient. So if you are a hater like me, don't go dismissing it all together, because once blended, it tastes mighty fine and is really creamy and not at all sour like Quark.
Anyway onto the Cheesecake Dip with Apple Nachos. So as mentioned, I had no quark, so with a genius moment blended some cottage cheese, added a few other ingredients, had a taste and then immediately had another taste and another and another. You can see where this is going, right? It was so good, I sat there and ate the whole lot of the sample I had made up, with some crisp sweet apple slices, it was gone just like that, because I just couldn't stop dipping in. Of course it mean't next time I was much more the wiser and made a double batch, because you just can't have enough of this.
For the flavouring for this Cheesecake Dip with Apple Nachos, I just stuck to vanilla this time round, but here are some other mix ins to choose from.
Dip Variations:
- Chocolate Cheesecake Dip - Mix in a couple of teaspoon of Sweet Freedom Choc Shot or Cocoa Powder
- Lemon Cheesecake Dip - Mix in lemon extract instead of vanilla and use crumbled ginger cookies
- Fruit Cheesecake Dip - omit the chocolate and mix in some fresh berries and crumbled cookie of choice
- Cookies and Creme - use crumbled Oreo's instead of the digestive

Cheesecake Dip with Apple Nachos

Gluten Free - use gluten free cookies
Ingredients
- 1.5 cups (360ml) of cottage cheese
- 1 teaspoon of vanilla extract
- 7.5g of semi-sweet chocolate chips
- 2 tbs of sukrin
- 1 digestive biscuit (or other cookie of choice)
- 2 large crisp sweet apples (I used honey crisps), sliced into thin slices
Instructions
- Add the cottage cheese, vanilla and sukrin: 1 to a mini blender and blend till smooth (or you can add to a tall beaker and blend with a stick blender)
- Stir the chocolate chips into the mixture.
- Add the mixture to a bowl.
- Crumble the digestive into fine crumbs over the top.
- Serve with the apple slices
- Dig in and enjoy!!
