Baked Tomatoes with Ham and Egg
Slimming Eats Recipe
Extra Easy – 1 HEa per serving
Original – 1 HEa per serving
- 2 large ripe tomatoes
- 2 eggs
- 2 slices of lean ham
- salt and black pepper
- 45g of reduced fat cheddar
Preheat oven to 200c or 400f (gas mark 6)
Slice the top off of each tomato and scoop out the seeds and flesh, so you have two tomato bowls
Season with salt and add half the cheese to the bottom of the tomatoes and the slices of ham.
Crack an egg into each tomato and season with black pepper
Top with the remaining cheese and bake in the oven for approx 15 mins, until cheese is melted and slightly golden.
Serve topped with some parsley.
These are great for breakfast, lunch or dinner, served on their own or with a side of your choice.
