This bacon, kale and sweet potato frittata is the perfect meal to start your day. Lots of speed foods and plenty of protein to keep you well satiated until your next meal.

I love these kinds of breakfast, I very rarely use my healthy extra's at breakfast time, unless I am making something like my American Style Pancakes.
I instead prefer to have a good source of protein with some speed veg of choice or fruit on the side.

For this breakfast I took out eggs, know I wanted some kind of omelette/frittata kind of breakfast. So it was a search through the fridge to see what I could find to serve alongside it - bacon, kale, tomatoes and some leftover sweet potato mash. Perfect!
Don't have any sweet potato mash on hand? Just pierce a small one with a fork a few time and place in the microwave for about 4-5 mins until softened and then you can just scoop out the flesh and mash and use that instead. Easy!!
This was so quick to make too. Delicious filling breakfasts like this bacon, kale and sweet potato frittata, don't need to take ages to prepare. It really was a case of just softening up the tomatoes, stirring in the kale, adding the other ingredients, cracking in some eggs then under the broil for a couple of minutes and It was done.

All that was then to be done, was to pour a fresh mug of coffee, sit down and enjoy!!!
This bacon, kale and sweet potato frittata is gluten free, dairy free, paleo and whole30 friendly. If you are okay with dairy a little bit of grated cheese is delicious on top, but it is good without too. I just made this for one, but you can easily double or triple up the ingredients to serve more.

Bacon, Kale and Sweet Potato Frittata

Ingredients
- 2 slices of cooked lean back bacon, chopped
- 3 tomatoes, quartered
- ⅓ cup/80ml of leftover sweet potato mash
- ½ cup/120ml of kale
- 2 eggs, beaten
- Optional: some grated cheddar
- low calorie spray
Instructions
- Spray a small frying pan over a medium high heat with spray oil
- Add tomatoes and fry till softened
- Add kale and cooked bacon and mix well.
- Add the sweet potato mash and stir to mix altogether
- Add the beaten eggs, season with salt and black pepper.
- Add optional cheese to top if using.
- Place under the broil (grill) until lightly golden on top
- Serve and enjoy!!
