Low Fat Sun-Dried Tomato Pesto

Makes 500mls
Ingredients
  • 85g of sun-dried tomatoes (not in oil), soaked in a little water to soften (3 syns)
  • 40g of basil
  • 50g of parmesan cheese, grated (10 syns)
  • 2 cloves of garlic
  • ¾ cup (175ml) of passata
  • 1 tablespoon of olive oil (6 syns)
  • salt and black pepper to season
Instructions
  1. Put all ingredients in a food processor and blitz until you have a smooth, but slightly course paste.
  2. Store in a resealable jar in the fridge
