I love a big spoonful of this relish with my eggs in the morning, or with sausage, bacon. It is also great with burgers and variety of different grilled meats. For variation you can also add some chilli to spice it up.
This recipe is dairy free, gluten free, paleo, vegetarian Weight Watchers friendly

Tomato and Red Onion Relish
Ingredients
- 450g (1lb) of fresh tomatoes (I used roma) - peeled and chopped
- 1 red onion, finely chopped
- 2 cloves of garlic, crushed
- 2 tablespoons of balsamic vinegar
- 1 teaspoon of grated fresh ginger
- ½ teaspoon of cinnamon
- 1 tablespoon of maple syrup or honey
Instructions
- Spray a saucepan over a medium high heat with some low calorie spray
- Add the onion, ginger and garlic and fry till softened.
- Add the chopped tomato, maple syrup, balsamic vinegar and cinnamon, reduce heat and simmer until the tomatoes break down (approx 20-30mins)
- Season as needed with salt and black pepper.
- Store in a lidded jar in the fridge
Notes
Tip: blanch in hot water or use a serrated peeler to peel the tomatoes

Hi Fiona, it will keep for a about a week in the fridge if not using a proper jarring/sterilizing method.
