The Ultimate Breakfast Sandwich - perfect way to start your day!!
Sausages, egg, spinach, tomatoes, and mushrooms what more could one ask for? All packed into a delicious Breakfast Sandwich using your Healthy Extra B for the wholemeal bread.
All that's left to do is pop on the kettle and make yourself a nice cup of tea or coffee to go along with it.
or if you are like me, brew yourself a full pot of coffee, because one cup of coffee won't do. In fact hubby and I often fight over the "top of the pot" as we like to call it, as we always feel the first poured cup of coffee is the best.
The only syns are in this Ultimate breakfast sandwich, come from the sausages you use. I like to use Amylu Chicken Gouda Sausages which I get from Costco in the USA.
They are only 1.5 sys per sausage and taste amazing, especially in a delicious stacked sandwich like this.
For variation in this Ultimate Breakfast Sandwich - you can also use lean bacon or ham instead of the sausages, which will also then make it syn free.

The Ultimate Breakfast Sandwich
The Ultimate Breakfast Sandwich - perfect way to start your day!!
Ingredients
- 1 low syn sausage - 1.5 syns (or use 2 smaller ones)
- 2oz/60g of whole wheat bread (2 slices) - HEb
- 1 egg
- 1 large ripe tomato, sliced thinly
- a small handful of baby spinach
- 3 mushrooms, sliced thinly
- Salt and black pepper
- Spray oil
Instructions
- Grill or fry sausages till browned and cooked through, then slice in half and slice in half again lengthways.
- Spray a frying pan over a medium high heat with spray oil
- Add the mushrooms and a pinch of sea salt and fry until lightly browned.
- Spray a small lidded pan over a medium heat with cooking oil spray, crack in the egg, add lid and cook until yolk is just set over (but still runny) - if you prefer a hard yolk cook for a little longer. Season with salt and black pepper.
- Stack your sandwich (if you prefer you can toast bread, but I like it untoasted for this)
- Place on slice of bread on a plate, add a small handful of baby spinach, top with the sliced sausages, then the fried mushrooms.
- Top with the egg, sliced tomato and the final slice of bread.
- Carefully slice in half
- Enjoy!!

- Extra Easy - 1.5 syns and 1 HEb per serving
- WW Smart Points - 6 per serving
- SP friendly - swap the sausages for ham or lean bacon
