Cool down in the Summertime with these refreshing Raspberry Lemonade Popsicles.
Last year the kids wanted to make some of their own popsicles (ice lollies) of choice, so I ordered this fab ice Norpro Frozen Ice Pop Maker on Amazon with some wooden ice pop sticks.
and the kids had great fun coming up with some suggestions for ice lollies, the ones they loved the most were these cute little Watermelon Ice Pops.
With the weather being pretty hot this week, I dug it out of the drawer to make some refreshing ice lollies, that I can enjoy to cool down.
Hunting around for what I had, I combined some raspberries with some lemonade that was a little one the flat side (best thing to use, don't use fizzy or it will expand out of the moulds (trust me).
To make the raspberry lemon, I blended up the fresh raspberries in my Nutri Ninja Blender with Auto IQ (click to see me on amazon). This blender is amazing. The auto iq technology feature, mean it blends to a set pattern depending on what it is your are making.
Then once I had the raspberry puree, it is important to put it through a sieve to remove all the little seeds, otherwise you will have an Raspberry Lemonade Popsicles that is grainy.
Once you have put through the sieve, you can combine the raspberries with the slightly flat lemonade and 2-3 tbs of fresh lemon juice (depending on how sour you like them), you can taste test before adding to the moulds.
Then pour into the molds, place on the lid and pop in the wooden ice lolly sticks and you can place in the freezer to freeze. Once frozen, I run under running water just to loosen them from the mold and then pop into a zip lock bag and these Raspberry Lemonade Popsicles are all ready to grab and go for a hot summer's day when you fancy a refresh ice lolly.

Raspberry Popsicles
This recipe is gluten free, dairy free, vegetarian, Slimming and Weight Watchers friendly

Ingredients
- 1 cup of raspberries
- 2 cups of slightly flat diet lemonade (sprite or 7 up) and additional for blending raspberries
- 2-3 tbs of fresh lemon juice
Instructions
- Add the raspberries to a blender with a little bit of the lemonade and blend till smooth.
- Pass throw a sieve, just to remove any of the seeds etc from the puree.
- Add the puree to a large jug with 2 cups of slightly flat lemonade and the lemon juice
- Mix to combine
- Add the the ice lolly/popsicle mould. Cover with lid and add in the wooden ice pop sticks.
- Place in the freezer until frozen.
- Once frozen, just run under running water, just to loosen from mould and then pop into a ziplock bag.
- They are then ready to just grab and go when required.

Hello there! These look and sound divine! yet I am a bit confused when you said that 1 cup of raspberries is 3 syns when my books show them as speed food and are free all you can eat. This would make your Popsicles totally free! 🙂

Hi Charlene, if you look at the recipe write up, I have explained about fruit. Only fruit in it's raw form is free, once you blend, puree or cook fruit, it becomes syns. Hope that helps 🙂

Hi when you put these in a ziplock bag do you put some in the same bag or 1 per bag?

I put them all in the same back once they are frozen.
