Enjoy the simple but delicious flavours in this Pea and Zucchini Soup! Light, easy, and versatile—it can be cooked on the stove or in a pressure cooker!
My dad arrived for a visit from Scotland just over a week or so ago now and I think he brought the cold weather with him, because it has been nothing but raining and miserable ever since. So all the yummy salads I planned for this week, kind of went out of the window and I decided I wanted soup instead.
I must admit I am usually one of those people that doesn't really eat much soup in the warmer months, but things have kind of changed over the last year. I think it was because I starting combining my soups with lots of little bites of other little things. Usually some leftovers from the night before to turn them into more of a meal, so they just seem all the more appealing.
The other reason is my beloved Instant Pot. I know I harp on about this thing, but seriously it is the best thing I have ever bought, I wasn't sure it would get much use once the winter was over, but I can safely say it is still used almost daily.
Wondering what an Instant Pot is?
It is basically a 7in1 cooker, and it slow cooks, pressure cooks, sautés, has a setting for soup, chilli, rice, porridge and even makes yoghurt (I haven’t tried that yet).
This is one of the best things I have bought and I use it almost daily in one way or another. Hey I even cook my boiled eggs in this – you should see how effortlessly they peel.

So with another cold rainy day and a raid of the fridge to see what I could use for some soup today, I settled on a bag of fresh English peas and some zucchini (or courgette as it's called in the UK).
Once all the ingredients are added to the instant pot for this Pea and Zucchini Soup, it literally takes 5 minutes cooking and you are done. How cool is that?
Don't worry if you don't have an instant pot though, as this can also be cooked stove top.
Serve this Pea and Zucchini Soup, just as it is or add some protein or leftovers to the top. Cheese, chicken, cooked sausage you name it would be great just scattered on the top for a delicious filling meal.
I went for some chicken thighs. I just season with salt, pepper and paprika and quickly cooked in a pan with some spray oil till lightly golden and cooked through. It was perfect with the Pea and Zucchini Soup.
You have gotta love have quick and easy it is to make too.

Pea and Zucchini Soup
Enjoy the simple but delicious flavours in this Pea and Zucchini Soup! Light, easy, and versatile—it can be cooked on the stove or in a pressure cooker!
Ingredients
- 1 onion, finely chopped
- 2 cloves of garlic, crushed
- 350g of courgette (zucchini) chopped
- 300g of English peas
- 3.5 cups (840ml) of chicken stock (broth)
- salt and pepper to season
- pinch of dried Thyme
- low calorie spray
- Fresh chopped parsley
- 30g of parmesan, grated
Instructions
Stove Top
- Spray a deep soup to with some spray oi
- Add the onion and garlic and fry for 5 mins to soften.
- Add in the zucchini, peas, thyme, stock and bring to a boil.
- Reduce heat and simmer for 20 minutes, then add to a blender and blend till smooth or you can use a stick immersion blender.
- Season as needed with salt and black pepper.
- Sprinkle with some fresh chopped parsley and add a little grated parmesan from your HEa (optional).
Instant Pot
- Set to saute mode
- Spray with spray oil
- Add onion and garlic and fry for 5 mins to soften.
- Add in the zucchini, peas, thyme, stock and add the lid, close valve and set to 5 mins high pressure.
- Once it has finished cooking time, do a quick pressure release.
- Blend in a blender or with an immersion stick blender until smooth.
- Season as needed with salt and black pepper.
- Sprinkle with some fresh chopped parsley and add a little grated parmesan

I made this in my soup maker. It tastes really good. I followed the recipe exactly and I found it too thin.. I usually make my soup thicker. Also the recipe says there are three servings. It yields are about 1600mls of soup. So there’s far too much for just 3 servings. I’m thinking of just adding more peas and zucchini. Any advice please?

I can only assume it was thinner because of the soup maker, as I've not made this in one and this has precise measurements of all the ingredients. I don't like my soup super thick though, as that's more like a puree than a soup. It definitely only makes 3 servings. If you add it to a pan and simmer for a little longer, it should reduce down and thicken more.
