Serves 1
Ingredients:
1 medium salmon fillet
2 tablespoons of fat free mayonnaise
couple of tablespoons of juice of lemon
sprinkling of parsley
for the salad:
Romaine Lettuce (or other variety of your choice)
Chopped cucumber
Chopped fresh cherry/grape tomatoes
Chopped up gerkin
couple of tablespoons of sweetcorn
Frylight or Pam Olive Oil spray
Salt and pepper to season.
Method:
Rinse your salmon fillet, and pat dry.
Place on a board or plate and season both sides with some salt and black pepper.
Place a skillet or frying pan over a medium heat and spray with Frylight or Pam olive oil spray.
Add the salmon fillet and cook until slightly golden on both sides, don’t over cook as you want the salmon nice and moist.
In the meantime, place the mayo, lemon juice and parsley in a bowl and mix together thoroughly.
Arrange your salad on a plate.
Top with your pan fried salmon fillet and a finish off with a couple of dollops of your mayonnaise.
A yummy and very quick lunch or main meal.

Had this for lunch today but without the gherkins. I bet they would add a nice bite. My husband and I both really loved it -- very fresh. I snipped a few chives into the lemon mayo. Delish!
