High Fibre Cake

This Fruit and Spice Scan Bran Cake is my go to treat, when I want something high in fibre to enjoy with a nice cup of tea or coffee.

Usually I make a baked Cheesecake or muffins of some sort, but when I noticed  some scan bran in the cupboard that needed to be used up,  I just threw together some ingredients, aiming for a kind of bread and butter pudding and this totally hit the spot.

Moist, spicy, fruity –  I couldn’t even taste the scan bran like you do in some cakes and it really was a nice substitute for the very high calorie filled bread and butter pudding recipes you see.

What is Scan Bran?

Scan bran is short for Scandinavian Bran Crispbread. A very high fibre and hard crispbread that is great for keeping you well satiated.

They are pretty hard to eat on their own, but with a good choice of toppings they can be more enjoyable. However you eat them, they are going to keep you fuller for much longer than any other cracker or bread.

Fruit and Spice Scan Bran Cake

Yield: SERVES 4
Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes

Easy Delicious Fruit and Spice Scan Bran Cake - high in fibre and the perfect treat for any day of the week.

Ingredients

  • 5 scan bran (5 syns)
  • 2 eggs
  • 1/4 cup of vanilla yoghurt (fat free)
  • 1 tsp of cinnamon
  • 1/2 tsp of all spice
  • zest of a lemon
  • 28g of sultanas or raisins (4 syns)
  • 1 tsp of baking powder (0.5 syns)
  • 1/4 cup of sukrin (or other sweetener of choice) (2 syns)
  • spray oil

Instructions

  1. Preheat oven to 200c or 400f
  2. Grease a ovenproof round cake tin with some spray oil
  3. In a dish, soak the scan bran in some boiling hot water to soften.
  4. Add scan bran to a large bowl.
  5. Add the cinnamon, all spice, baking powder and brown sugar blend splenda.
  6. Separate the yolks from the eggs into a small bowl. Set the egg whites aside
  7. Add the yoghurt, vanilla extract and lemon zest to the egg yolks and whisk.
  8. Add this mixture into the scan bran.
  9. Add the sultanas and mix thoroughly.
  10. Whisks your eggs whites into meringue peaks, and fold them into the scan bran mixture.
  11. Pour the cake mixture into your greased cake tin, and bake in the oven for approx 30-40mins, a toothpick entered into the centre of the cake should come out clean. But you don’t want the cake to dry out too much, it should still be nice and moist in the middle.

    Hi, I made this cake this afternoon and what can I say. The best scan bran cake I’ve made and tasted since joining SW 15mths ago. It was light, moist and really tasty.

    I am so glad you enjoyed it. Thank you. It is definately one of my favorite cake recipes too. It was actually chance that it turned out so well, as I just threw together a load of ingredients that I thought would work well together and they did :). My first scan bran cake where you can not taste scan bran lol.

    Hi, I’ve made this cake often since dropping you a line on Feb 2nd. It’s a favourite of my husbands also. We had a tasting session at our group meeting today and I took along your cake. It was a resounding success. Unfortunately not everyone was able to have a taste so I’ll be taking along another one!. I’ve passed your web site details on to those that are on the internet. However a few of the senior ladies do not use a computer and have asked if I could provide them with a recipe. Would you have any objection to me passing this recipe on.

    Hiya, no of course I don’t mind the recipe being given to others, as long as it is confirmed it came from slimmingeats. Whether they view it on here and love it, or it is recommend in other ways and they love it, that is fine by me :).

    This is the first scan bran cake I have made & I love it!! I have really missed sultana loaf & teacakes & malt loaf & this is just as satisfying. I made a square one & cut it into 12 slices & call it a syn a slice. I will def be making it again. Thank you. xx

    What is scan bran? I live in Spain and I am not aware of it, is it like a ryvita type cracker?

    yep it is a bit like ryvita, but much higher in fibre and a lot harder in texture.If you google scandinavian crispbreads you will find them, I think you can order online if you can’t get them where you are, not sure on how expensive that will be to deliver to spain though. If you can get All bran though that works just as well as a replacement.

    this was lovely with a dollop of fat free fromage frais and the next day was even better just like bread pudding.  Husband and son like it too.

    Have tried scan bran cakes before and really not liked them, but have just made this and it is indeed lovely! Will make again when I fancy a sweet treat. Was very nice, thanks for the recipe.
