Butter Chicken Poutine

Butter Chicken Poutine!! - The ultimate dish for leftover butter chicken - crispy golden fries, topped with butter chicken and melted cheese make this one of those recipes you will not ever want to end.

Cook Time 40 minutes
Total Time 55 minutes

Ingredients

  • 600g (21oz) of floury potatoes (leave skin on) - cook as per my Perfect Chips - click for recipe
  • 1 serving of leftover Butter Chicken - warmed up - click for recipe
  • 100g (3.5oz) of mozzarella - roughly broken into chunks
  • sea salt
  • fresh coriander (cilantro)

Instructions

  1. Preheat oven to 200c, 180c fan 400f (gas mark 6) and cook chips as per my Perfect Chips 
  2. Once chips are cooked. 
  3. Divide chips on the tray into two servings, top each serving with some warmed up leftover butter chicken
  4. Scatter each serving with mozzarella (add a pinch of sea salt over the top)
  5. Place back in the oven for a couple of minutes just until the mozzarella starts to melt. 
  6. Then carefully using a spatula, move the poutine to a plate.
  7. Scatter with freshly chopped coriander.
  8. Dig in and enjoy!!
