data-step-index=\"1\" id=\"mv_create_251_2\">Add the onion and saut\u00e9 for a few minutes, until it starts to soften and turn translucent.<\/li><li data-step-index=\"2\" id=\"mv_create_251_3\">Add the aubergine, garlic and fresh tomatoes, and continue to fry for around 5 minutes, until they start to soften and break down.<\/li><li data-step-index=\"3\" id=\"mv_create_251_4\">Stir in the paprika, cumin, oregano and cayenne, mixing until everything is well coated in the spices.<\/li><li data-step-index=\"4\" id=\"mv_create_251_5\">Add the passata, maple syrup and vegetable stock. Bring to a boil, then reduce the heat, cover and simmer for 30 minutes.<\/li><li data-step-index=\"5\" id=\"mv_create_251_6\">While the soup simmers, preheat the oven to 180\u00b0C fan, 200\u00b0C, 400\u00b0F or gas mark 6.<\/li><li data-step-index=\"6\" id=\"mv_create_251_7\">Add the sweet potato to a baking tray lined with parchment paper. Drizzle with the remaining \u00bd tablespoon of olive oil, sprinkle with paprika, salt and black pepper, then toss to coat. Bake for around 30 minutes, or until tender and golden.<\/li><li data-step-index=\"7\" id=\"mv_create_251_8\">Carefully add the soup to a blender and blend until smooth. Return it to the saucepan and stir until lovely and velvety.
