{"id":6137,"date":"2013-02-25T15:43:53","date_gmt":"2013-02-25T19:43:53","guid":{"rendered":"https:\/\/www.slimmingeats.com\/blog\/?p=6137"},"modified":"2024-04-03T14:41:48","modified_gmt":"2024-04-03T19:41:48","slug":"zucchini-and-parmesan-quinoa-bites","status":"publish","type":"post","link":"https:\/\/www.slimmingeats.com\/blog\/zucchini-and-parmesan-quinoa-bites","title":{"rendered":"Zucchini and Parmesan Quinoa Bites"},"content":{"rendered":"\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2013\/02\/DSC_0269.jpg\" alt=\"DSC_0269\" title=\"DSC_0269\"\/><\/figure>\n\n\n\n<p>Slimming Eats Recipe<\/p>\n\n\n\n<p>Serves 2<\/p>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00bd cup of uncooked quinoa<\/li>\n\n\n\n<li>1 zucchini (courgette), grated<\/li>\n\n\n\n<li>60g\/2oz of parmesan<\/li>\n\n\n\n<li>black pepper<\/li>\n\n\n\n<li>1 egg, beaten<\/li>\n\n\n\n<li>1 egg white<\/li>\n\n\n\n<li>240ml of chicken or vegetable stock<\/li>\n\n\n\n<li>olive or coconut oil spray<\/li>\n<\/ul>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Method<\/span><\/strong><\/p>\n\n\n\n<p>Thoroughly rinse the quinoa under cold water<\/p>\n\n\n\n<p>Add the quinoa to a chicken\/vegetable stock and bring to a boil. Reduce heat, cover and allow to simmer on a low heat until stock is absorbed. Turn off heat, but leave lid on to continue to steam for approx 5-10 mins. Then using a fork, fluff up the quinoa. Each grain should have what looks like a little hair when cooked.<\/p>\n\n\n\n<p>Transfer to a bowl and allow to cool.<\/p>\n\n\n\n<p>Preheat oven to 180c or 350f (gas mark 4)<\/p>\n\n\n\n<p>Grease a mini muffin pan with some olive oil&nbsp;or coconut oil spray<\/p>\n\n\n\n<p>Squeeze excess moisture from the zucchini (courgette) and add this into the quinoa along with the parmesan. Season with some black pepper.<\/p>\n\n\n\n<p>Add the beaten egg and egg white and thoroughly mix ingredients together.<\/p>\n\n\n\n<p>Spoon the mixture into the holes in the muffin pan and gently push down with the back of a spoon.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2013\/02\/DSC_0255.jpg\" alt=\"DSC_0255\" title=\"DSC_0255\"\/><\/figure>\n\n\n\n<p>Place in the oven and bake for approx 20-25 mins until lightly golden.<\/p>\n\n\n\n<p>Allow to cool slightly in the pan and then gently ease out each quinoa bite with a small spoon.<\/p>\n\n\n\n<p>Makes approx 12 mini bites.<\/p>\n\n\n\n<p>If you prefer, you can scoop the mixture onto a greased baking tray and make the mixture into thin patties, by flattening down with a fork and baking until crisp and golden.
