{"id":5724,"date":"2012-10-19T08:10:00","date_gmt":"2012-10-19T12:10:00","guid":{"rendered":"https:\/\/www.slimmingeats.com\/blog\/?p=5724"},"modified":"2026-02-25T14:47:48","modified_gmt":"2026-02-25T19:47:48","slug":"lentil-wheat-berry-and-vegetable-curry","status":"publish","type":"post","link":"https:\/\/www.slimmingeats.com\/blog\/lentil-wheat-berry-and-vegetable-curry","title":{"rendered":"Lentil, Wheat Berry and Vegetable Curry"},"content":{"rendered":"\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/10\/DSC_1557.jpg\" alt=\"DSC_1557\" title=\"DSC_1557\"\/><\/figure>\n\n\n\n<p><strong><u><span style=\"font-family: Throw My Hands Up in the Air; font-size: large;\">Lentil, Wheat Berry and Vegetable Curry<\/span><\/u><\/strong><\/p>\n\n\n\n<p><span style=\"font-family: Segoe Print; font-size: small;\">Slimming Eats Recipe<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small;\"><strong>Serves 6<\/strong><\/span><\/p>\n\n\n\n<p><\/p>\n\n\n\n<!--more-->\n\n\n\n<p><strong><u>Ingredients<\/u><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 onion, finely chopped<\/li>\n\n\n\n<li>2 cloves of garlic, crushed<\/li>\n\n\n\n<li>1 teaspoon of fresh grated ginger<\/li>\n\n\n\n<li>1 red pepper, chopped<\/li>\n\n\n\n<li>1 courgette chopped<\/li>\n\n\n\n<li>1 sweet potato, chopped<\/li>\n\n\n\n<li>2 tablespoons of tomato paste<\/li>\n\n\n\n<li>1 tablespoon of chilli powder<\/li>\n\n\n\n<li>2 teaspoons of cumin<\/li>\n\n\n\n<li>2 teaspoons of coriander<\/li>\n\n\n\n<li>1 teaspoon of turmeric<\/li>\n\n\n\n<li>\u00bd teaspoon of ground fennel seeds<\/li>\n\n\n\n<li>\u00bc teaspoon of nutmeg<\/li>\n\n\n\n<li>4 green cardamom pods<\/li>\n\n\n\n<li>1 cup (240ml) of red lentils<\/li>\n\n\n\n<li>1 cup (240ml) of wheat berries<\/li>\n\n\n\n<li>7 cups (1.68 litres) of vegetable stock<\/li>\n\n\n\n<li>salt and black pepper<\/li>\n\n\n\n<li>1 tablespoon of olive oil<strong><span style=\"color: #ff0000;\"> <\/span><\/strong>if you prefer you can use Frylight or Pam, but I think frying the vegetables in the olive oil gives a better flavour.<\/li>\n<\/ul>\n\n\n\n<p><strong><u>Method<\/u><\/strong><\/p>\n\n\n\n<p>Heat the olive oil in a large saucepan over a medium high heat. Add the onion, garlic, ginger, carrot, pepper and courgette and fry for approx 5 mins until softened.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/10\/DSC_1493.jpg\" alt=\"DSC_1493\" title=\"DSC_1493\"\/><\/figure>\n\n\n\n<p>Add the chilli, cumin, coriander, turmeric, fennel, nutmeg and tomato paste and mix well to evenly coat all the vegetables.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/10\/DSC_1497.jpg\" alt=\"DSC_1497\" title=\"DSC_1497\"\/><\/figure>\n\n\n\n<p>Stir in the lentils, wheat berries and sweet potato.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/10\/DSC_1512.jpg\" alt=\"DSC_1512\" title=\"DSC_1512\"\/><\/figure>\n\n\n\n<p>Pour in the stock<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/10\/DSC_1519.jpg\" alt=\"DSC_1519\" title=\"DSC_1519\"\/><\/figure>\n\n\n\n<p>Bring to a boil, then reduce heat, cover and simmer for approx 40 mins, until lentils and wheat berries have softened and most of the stock is absorbed.
