{"id":5461,"date":"2012-09-10T14:10:03","date_gmt":"2012-09-10T18:10:03","guid":{"rendered":"https:\/\/www.slimmingeats.com\/blog\/?p=5461"},"modified":"2026-02-25T14:10:54","modified_gmt":"2026-02-25T19:10:54","slug":"upside-down-cherry-scan-bran-cake","status":"publish","type":"post","link":"https:\/\/www.slimmingeats.com\/blog\/upside-down-cherry-scan-bran-cake","title":{"rendered":"Upside Down Cherry Bran Cake"},"content":{"rendered":"\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/09\/DSC_0451.jpg\" alt=\"DSC_0451\" title=\"DSC_0451\"\/><\/figure>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\"><span style=\"font-family: 'Throw My Hands Up in the Air'; font-size: large;\">Upside Down Cherry Scan Bran Cake<\/span><\/span><\/strong><\/p>\n\n\n\n<p><span style=\"font-family: 'Segoe Print'; font-size: small;\">Slimming Eats Recipe<\/span><\/p>\n\n\n\n<p><strong>Serves 6<\/strong><\/p>\n\n\n\n<p><\/p>\n\n\n\n<!--more-->\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong><\/p>\n\n\n\n<p>80g of all bran<\/p>\n\n\n\n<p>200g of fresh pitted cherries, cut in halve <\/p>\n\n\n\n<p>3 eggs<\/p>\n\n\n\n<p>2 tablespoons of golden syrup<strong><span style=\"color: #ff0000;\"> <\/span><\/strong><\/p>\n\n\n\n<p>6 tablespoons of light brown sugar <\/p>\n\n\n\n<p>1 teaspoon of vanilla essence<\/p>\n\n\n\n<p>2 tablespoons of fat free greek yoghurt<\/p>\n\n\n\n<p>oil&nbsp;spray<\/p>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Method<\/span><\/strong><\/p>\n\n\n\n<p>Preheat oven to 180c of 350f (gas mark 4)<\/p>\n\n\n\n<p>Grease a round cake dish with some oil&nbsp;spray<\/p>\n\n\n\n<p>Add the golden syrup to the bottom of the cake dish and place in the oven for a minute or so, just so it becomes more liquid like, that way you can easily swirl it around to cover the bottom.<\/p>\n\n\n\n<p>Loosely line the bottom with your cherries, making sure to place them cut side down.<\/p>\n\n\n\n<p>Soak the scan bran in a little hot water and then when softened, mash it all up with a fork. Drain any excess water.<\/p>\n\n\n\n<p>In a separate bowl, whisk together your eggs, sugar and vanilla essence. Then add this into your scan bran and fold all the ingredients together thoroughly.<\/p>\n\n\n\n<p>Mix in the yoghurt.<\/p>\n\n\n\n<p>Then carefully pour mixture into the cake pan evenly.<\/p>\n\n\n\n<p>Place in the oven till firm on top and a skewer entered into the centre comes out clean. Approx 45 mins.<\/p>\n\n\n\n<p>Allow to cool slightly, then gently run a knife all around the sides to loosen, Place a large plate over the top and then holding the plate over the cake pan, turn upside down and your cake will then be nicely laid on your plate with the fruit now at the top.<\/p>\n\n\n\n<p>Serve as is, or top with some cream or some quark.<\/p>\n\n\n\n<p>Enjoy!!<\/p>\n\n\n\n<p><strong>NOTE:<\/strong> You can try replacing the sugar with a Splenda, but&nbsp; I feel it needs the brown sugar&nbsp;to caramelize.<\/p>\n\n\n\n<p>You can also make different variations on this, using plums, pineapple, apple or pears etc<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/09\/DSC_0434.jpg\" alt=\"DSC_0434\" title=\"DSC_0434\"\/><\/figure>\n\n\n\n<p><em><span style=\"color: #008000;\">The recipe above has been calculated for Slimming World, however for those of you following the Weight Watchers plan or another calorie controlled type diet.
