The bean mix is from Costco and consists of the following: sprouted lentils, mung beans and adzuki beans and is from <a href=\"http:\/\/truroots.com\/products\/truroots-single-grains\/sprouted-bean-trio\/\">TruRoots<\/a><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/06\/DSC_0370.jpg\" alt=\"DSC_0370\" title=\"DSC_0370\"\/><\/figure>\n\n\n\n<p><strong><u>Ingredients<\/u><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>approx \u00bd serving of my Maple Bacon Baked Beans (made as per this recipe <a href=\"https:\/\/www.slimmingeats.com\/blog\/maple-bacon-baked-beans\">here<\/a>) <\/li>\n\n\n\n<li>2 courgettes. sliced in half lengthways<\/li>\n\n\n\n<li>salt and black pepper<\/li>\n\n\n\n<li>Frylight or Pam spray<\/li>\n\n\n\n<li>90g of mature cheddar<strong><span style=\"color: #ff0000;\"> <\/span><\/strong><\/li>\n\n\n\n<li>fresh chopped coriander<\/li>\n<\/ul>\n\n\n\n<p><strong><u>Method<\/u><\/strong><\/p>\n\n\n\n<p>Preheat oven to 200c or 400f<\/p>\n\n\n\n<p>Lined a baking tray with some aluminum foil.<\/p>\n\n\n\n<p>Get each courgette half and carefully scrap out some of the soft seeded part, so you have some slight dips in each half to fill with you filling.<\/p>\n\n\n\n<p>Place on the baking tray and spray with some Frylight or Pam spray and season with salt and black pepper.<\/p>\n\n\n\n<p>Fill each half with some of the Maple Bacon Baked Beans and top with the cheddar.<\/p>\n\n\n\n<p>Place in the oven and bake until cheese is complete melted and golden on top.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/07\/DSC_1392.jpg\" alt=\"DSC_1392\" title=\"DSC_1392\"\/><\/figure>\n\n\n\n<p><em><span style=\"color: #008000;\">The recipe above has been calculated for Slimming, however for those of you following the Weight Watchers plan or another calorie controlled type diet.
