It made a perfect lunch with my baked potato and salad.<\/p>\n\n\n\n<p>I have a great cheat version of doing my baked potatoes too, I half cook in the microwave, spray the skin with a little spray oil and rub in some sea salt and then finish off in the oven, it saves on lots of time, but you still get that amazing crispy skin, which is a must with a baked potato.<\/p>\n\n\n\n<p>Don't fancy a regular potato, try serving this with a baked sweet potato. Sweet potatoes don't take as long to cook. Add the tuna and sweetcorn mayo to a tub, and you can reheat the baked potato in the microwave, if you cook it the night before.
